Happy Hanukkah! When I was a kid the best part about Hanukkah was eating latkes. Then when I got older it was cool to play with fire and light the menorah, but latkes are so much more satisfying. Anyways, The Kitchn has posted a recipe for apple and cheese stuffed latkes which looks so good that I had to share it with you. As soon as I have some free time I am making these and eating them all.

My partner found this recipe today and is making it for me for dinner as I am 1/2 Jewish – LOL! She knows this time is really hard for me as this is only my 2nd Hanukkah without my grandfather (he passed away in 2009) so she decided to try and make my day better by treating me to my favorite Hanukkah treat!! I’m really excited for dinner! LOL!

I’ve never had latkes I don’t think, but I’ve just decided that I need some right away. Have you heard about the guy who ate (mostly) nothing but potatoes from October 1st to November 29th? Do you think I could survive on latkes alone?
I don’t know, but I would totally be willing to try with you. I’d probably make sure they’re the apple- and cheese-stuffed latkes to be safe, because, you know, nutrition.
