This is really quick to make, if you’ve caramelized the onions ahead of time! And even quicker if you have a julienne slicer. My advice is to be generous with the apples and onions, and make the pancakes really thin so they’re crispier.

I just love the description of this dish: “There’s a borderline obscene amount of butter. And you cook the onions for as long as you can possibly stand it — sautéing slow and low is nothing if not a tantric exercise — and then you cook them a little more, this time soaked in Madiera. What you’ve created is the highest form of caramelized onions known to man. Are you scared of the amount of butter pooling in the pan? Good. Add some more.”

  2. Holy moly, the caramelized onion tarte tatin looks fantastic. I’ve only ever made them with apples, so this will be fun to try.

    Also, re: 14 “Caramelized Onion Marmalade Served with Steak and Chips” <<< this is the way I like to approach meals, i.e. pick the condiment first and then think up something to be the vehicle for it.

    Also! A tip! If you're making a curry, slice up half an onion at the start, and get it going in a couple of spoons of oil in a frying pan on a low heat while you chop up everything else and generally dance round the kitchen. If you have enough oil/not too high a heat, you will hardly even need to touch them, and then BY MAGIC when your curry is done, you will have a handful of deliciously caramelised, crisp onion strands to adorn your curry and make it and the world a sweeter place.

        If you do want to try one this week, and you want to try out the onion pro-tip, give this a whirl. It’s quick, doesn’t use anything that’s hard to get hold of, and tastes great (well, it does if you love spinach)

        (also works paneer instead of chicken, or even potato. And use less water unless you want to watch it simmer away for three years)

    Also, caramelized onions and/or roasted garlic are truly excellent on top of Brie. Makes for a nice ~fancy~ appetizer if you’re entertaining people.
