(Though it varies according to variety, temperature, whatever, broadly, real honey is thicker, has a scent, does not dissolve in water, does not stain white fabric and contains bits of pollen or wax. In the store, you can tell because it’s probably more expensive, or the store you’re at is organic-y or really a farmer’s market.) Personally I look at what I want to use the honey for and then decide how much I care. Baking? Maybe it’s okay if it’s cut with some other type of sugar. Straight up in my tea or a more delicate situation where I’m really going to taste it? Bougie raw honey with pollen, wax and bee parts please. Anything else, like for most of the honey recipes below?     Is this a good time to share my honey facts that I learned last month? Online sources were claiming that the FDA says honey without pollen isn’t really honey. So, being the nerd I am, I went to the FDA’s website and read the FDA regulatory guidelines on honey, and it said nothing of the sort. Honey doesn’t need to have pollen in it to be considered real honey. Also, scientists can’t agree on whether or not eating local honey helps with allergies. I like to think eating honey most days is why I didn’t get sick all summer, but that’s probably not why.

  5. Honey is magical medicine! Local as you can get, raw, unpasteurized. Infuse it with herbs or spices for additional yumminess. My favorite is rose-hibiscus infused honey.
