22 Vegetable Recipes for When Your Winter CSA Box Overflows

Late autumn is a strange time for my CSA box. Some weeks we don’t even get one, because the temperature is too low, but when I do it’s full of so many root-based hearty vegetables I never know what to do! But the thing is, winter veggies are amazing! You can eat them sweet, you can eat them savory, for breakfast, lunch or dinner, and because they’re so durable, you can slow-cook them all day or quickly roast them and you’ll have a meal to remember. In response to the wealth of winter veggies in my CSA box, I’ve ended up making a lot of potato soup, but maybe you, like myself, can only eat potato soup so many times in one month and you’re looking for something else to do? The winter CSA box may feel overwhelming, but instead, why not think of it as overflowing with delicious opportunities? Here are 22 recipes to help you take best advantage of the wealth of veggies right at your fingertips. This one goes out to all my vegetarian and vegan cuties.

    tho with puree, I often feel like I’m eating baby food. My solution to that is to put toasted walnuts and goat cheese on top, but I still wish there was another answer.

  2. I’ve been considering signing up for CSA. I love the thought of supporting local farmers, and eating delicious fresh produce. I’m not sure how it works in NYC/how much it costs, but it’s definitely something I’m going to look into. My only real concern is when there’s a super lot of produce, and I’m just cooking for one…I don’t want to waste.

    • Some CSAs have different sizes of boxes to choose from (mine has a “personal box” option), but you could also split a box with friends. For the past two growing seasons, I’ve split a box with some friends, and picking up our box and dividing the vegetables among us or going to the farm directly to collect our produce and pick-your-own herbs, flowers, berries, and more vegetables has been the highlight of living in the “Garden State” (NJ) for grad school.

      Earlier this fall I did end up chopping and freezing some vegetables I was afraid I wouldn’t use in time, and making and freezing a couple of batches of salsa during the height of tomato and tomatillo season. Last year I gave a little bit a produce to a then-gal pal.

  3. This is perfect, I was just looking for winter recipes. Love all the soups! :) Also, I’d love to make vegetable broth. Home made broth is probably a lot tastier than store-bought stuff.
